Lengua with Liver Sauce

One of the unique recipes that I know, that uses a not so ordinary ingredient: Lengua with liver sauce. That is beef tongue with liver sauce

The reason that I love cooking lengua with liver sauce is that it is not your typical adobo or sinigang recipe. This is take a unique ingredient and it is easy cook for the weekend. You can use a pressure cooker or a slow cooker to make it tender the tongue. After that is a quick saute of the ingredient together and that’s it.

There are different variations of this dish using the same basic lengua. It can be done with a tomato based sauce, a mushroom based sauce. The one that we have lengua with liver sauce. I’ll share the recipe for the other two at a later time. Lengua is something that can be so tender and have a nice texture when you bite into it. It can also give some people hesitation when you serve it. I would recommend anyone to try lengua and it might be our next meat that you’ll love.

It doesn’t taste like chicken but it can be good. Let’s give it a try, maybe the next time you see it on the taco menu, you won’t be so scared to try it on different food.

Lengua with liver sauce
A unique recipe that uses beef tongue as its main ingredient. The liver sauce is a quick sauce using the broth from slow cooking/pressure cooking the tongue and some liver spread.

Instructions
  1. Put the tongue in a slow cooker for 8 hours or a pressure cooker for 25 minutes to tenderize the meat.

  2. Dice the onions. Chop up the garlics and cut the red bell peppers into cubes.
  3. Start with some olive oil and saute the onions.

  4. Then add the garlic into the pan.

  5. Add the tongue and mix all of the ingredient.
  6. Create the slurry that is made from the broth and the liver spread and add it to the pan. Mix it all togther so that the sauce covers all of the tongue. Let it simmer for a couple of minutes. I added more sauce later since we prefer more.
  7. Add the cheese and red bell pepper and let it simmer for another 5 minutes.
  8. Mix and enjoy.
